As the days and nights get cooler, the mice start to think of comfort foods, especially those that will make the most of their seasonal produce.  These savoury muffins make a delicious light meal and are another way of using up those windfall apples…..

INGREDIENTS

  • 150g self-raising flour
  • 40g softened butter
  • 1/2 tsp baking powder
  • 50g caster sugar
  • 50g grated cheddar cheese
  • 2 eggs
  • 1 cooking apple, cored, peeled and cut into small chunks
  • 1 heaped teaspoon chopped sage
  • A handful chopped walnuts
  • a pinch of salt
